Our vineyard with the winery, Kitrvs Winery, is located in an area inhabited not by accident from the ancient times. From the 6th century, the adjacent village of Pydna was the seat of a bishopric and before the liberation was the home of an Ottoman lord.
Our goal is to create live wines that make up the power of nature and the work of man in their bodies. The creation of such wines, we know that it requires obedience to the conditions of nature, knowledge management, exercise in discipline, patience, alertness, insistence on quality, even if it is being contradicted in the current logic, exchange of ideas and experience with people serving the same purpose . The synthesis of these parameters extracts the hardest vines from their hardest varieties and determines the final result.
The vineyard of the winerrie is planted on a north-eastern slope according to the contemporary with the linear system and includes the white varieties of Malagouzia and Verdicchio and the red Syrah and Aglianico. The management of the vineyard aims at achieving the optimum ripening of the grapes by using the rules of good agricultural practice as well as the monitoring of critical parameters of the cultivation (monitoring of phenomonal traps, meteorological data, water potential of the leaves using a pressure chamber for the planning of irrigation). In order to ensure the desired quality, particular emphasis is given to controlling the liveliness of plants and shaping production at low levels by carrying out green harvesting.
When we decided to build a vineyard and a winery, the core of our thinking was that when the way (even luxury) is low, any wins sooner or later turn into defeats. This approach that has mobilized and motivates our evolving venture chooses to treat material goods not as objects of economic exploitation and as a means of impressing. This choice keeps the sensitivity to the good and helps first of all us to evolve following this path. The creation and operation of this material, as a winery, subject to the above treaty, with the aid of science and technology, in conjunction with the gravitational and cooling capacities of the earth, gives expression to its existence, balancing its relationship with nature and things, reversing the added entropy and inertia of another building.
The harvest takes place in the evening or early morning hours of the day and the harvest is placed in a cooling chamber, so that the de-bursting and breaking of the rails takes place at the lowest possible temperature. The technique of cold extraction is applied, the corns are kept in contact with the low temperature juice. The free-flowing and non-mechanical pressure must be led to a temperature-controlled reservoir for pre-clarification. Alcoholic fermentation is also carried out at a controlled temperature, and at maturity the “battonage” method (periodically shuffling delicate lemon beverages) is applied to preserve the flavors of the variety at the base of a rich “body”.
In our privately-owned vineyard with a winery in North Pieria, we apply a low-yielding cultivation system that maintains the local natural balance in balance and acne. Nature on its side on slopes open, exposed to continuous exchange of northern seawater allows vines to incorporate the peculiarity of the soil and the delicious imprint of the flowering and fruitfulness of the area.
